Since I moved to Austin in 1996, I have been on a journey to find the tastiest chicken pot pie in town. To my disappointment, I had not found a single place that lived up to my mother’s homemade chicken pot pie. Not long after my dear mother passed away in 2006, I tried the Casserole Queens’ chicken pot piet at a dinner party. Upon the first bite, I was instantly brought back to the memories of my mother’s kitchen and her delicious homemade cooking. Lo and behold, I had found what I had been searching for all these years and with the help of the The Casserole Queens Cookbook, I’m able to make my own chicken pot pie along with other flavorful casseroles!

I made the Mama Mia Lasagna from this cookbook yesterday and it was fantastic! Worth the extra time to make it all from scratch. Can’t wait to try the chicken pot pie next.
