The Joy of Scones

A peruser of the interweb, I had of course heard of Joy the Baker. Her brightly colored doughnuts and thoughtful vegan options always kept her in the back of my mind for those special friends’ birthdays. With Joy Wilson coming next week, I finally had my chance to try one of her recipes. I decided to ask my dear friend Alisha, fellow food eater and blog reader, on this kitchen adventure.

The book is truly lovely, it translates all the style of the Joy the Baker blog to paper really well. With 100 beautifully photographed recipes the choice was a difficult one. After much deliberation we settled on Oatmeal Raspberry Ginger Scones.

Oats, flour, baking powder, baking soda, ginger (fresh and ground), nutmeg, salt, sugar, an egg, raspberries, buttermilk, of course butter! Most of which I had, which is dangerous to think of how easily I could make these all the time. They are so goood. Buttermilk makes some amazing foods, but I have to admit the smell always gets to me. Now you know.

Beat the cold buttermilk and egg. Or have a friend do it!

Mix those dry ingredients!

Cube the butter. Joy recommends using a cheese grater on cold butter to make the dough nice and crumbly. Great idea, unfortunately we didn’t have one, but in the future I’ll be grating all my butter. Chop that ginger!

Mix the wet and dry ingredients with the butter and ginger. At this point laugh if possible, do your best to have it come naturally. Add the raspberries. Don’t over mix and let them break down because, as Joy also taught me, raspberries will react with the baking powder and turn the scones blue!

Roll out the dough on a floured surface and cut into the desired shape. We went for triangles because we’re squares. Yes, I’m aware that’s not funny.

BAKE!

These really were fantastic, in fact I want one right now. They were easy and the ingredients were pretty inexpensive, they’re also the perfect thing to make ahead of time so you can sleep longer. All qualifications for a winning recipe in my book.
