Much like Ellise Pierce I found myself missing home, and missing my mom. In Ellise’s new book Cowgirl Chef, she describes living in France, missing Texas and cooking French versions of all her down home favorites to fill that void. While Ellise was in far off France, and could not afford the flight back to Denton where her mother resides, I jumped in my car and drove across Texas to mine. She was happy to have me, but even happier when I told her I’d be making breakfast from Cowgirl Chef.
I decided on the cowgirl quiche. We both love Mexican food, especially when it has a little heat. Its homemade chorizo and cornmeal sea salt crust intrigued me. The recipe begins by mixing ground pork with a handful of spices, most important of which is lots of chili powder. I added cayenne to make it hotter! Brown the ground pork. 
Mix up all the ingredients for the crust. Roll it out and half bake the crusts.I blind baked the crusts and browned the pork the night before to make breakfast run more smoothly, I’m not really a morning person.

Layer that golden crust with some cheese, top that with the browned chorizo, and then add a can of hatch chilies. Oh isn’t it beautiful already!

Now mix the eggs with the cream and pour over the layered crust.
Told you I’m not a morning person. Shout out to my Uncle Sal, what a guy.
Top with scallions. I used green onions, my mom taught me there is a difference. Thanks mom. Sorry Ellise Pierce.
BAKE!

This was so good, my mom agrees. It’s a breakfast taco in a perfect quiche! I will use this polenta crust on everything I bake in the future.
